For your Christmas breakfast special this year, add a foreign recipe to your menu. This is a very delicious, very easy to make snack that goes well with a cup of milk tea, coffee or hot chocolate.
Kabanda is quite popular all over Uganda mostly because the ingredients are not only must-have household items but are also easy to find and super cheap in the market. It is a two-ingredient only snack. Alright, let's get to it.
What you need (These measurements will make about 8 pancakes)
A cluster of very ripe sweet bananas (plantain or small yellow bananas)
1 cup of cassava flour
1 litre of Vegetable oil (for deep frying)
Step One: Peel about 6 bananas into a bowl and mash them with a fork till smooth
Step Two: Mix one cup of cassava flour into the sweet banana mash to form a soft dough. The dough should not be too sticky. Add more flour if necessary
Step 3: Dust kneading surface with some flour and move dough onto the surface. Knead the dough till about 2 inches thick
Step 4: Use cookie cutter to cut out the pancakes
Step 5: Deep fry in heated vegetable oil till pancake turns dark brown
Step 6: Make a cup of tea and enjoy your pancakes while still warm
